The commercial question in layers is usually eggshell quality and persistency of lay across an increasingly long cycle. Zinc is a required trace mineral with a well-established role in the enzyme systems involved in shell formation, and zinc source and bioavailability are legitimate variables in a layer premix.
Ruminants introduce a complication that monogastrics do not: the rumen. A mineral fed to a cow is first exposed to a large, active fermentation environment, and both mineral solubility and interactions with other dietary components change what actually reaches absorption. Copper-zinc-sulphur-molybdenum antagonisms are a standard consideration in ruminant mineral nutrition and are not a footnote.
